Ingredient List
- 6 mangoes, cheeks removed
- Cointreau
- Caster sugar (optional)
- Brut Rose champagne, chilled
Simple, luxurious and quick to prepare. Use the best of the season’s mangoes.
Serves 6
Put the mango cheeks into a decorative serving bowl. Sprinkle with a little Cointreau and caster sugar, cover and refrigerate until well chilled.
Just before serving pour over enough champagne to cover the mangoes
and serve immediately.
Tip: a sweet white dessert wine can be substituted for the champagne – in which case go lightly on the sugar
