Chocolate Buttermilk Cake

This is a lovely moist cake and the addition of cinnamon gives it an irresistible fragrance. It's a  goodie for the kids to make for Dad for Father’s Day. Preheat oven to moderate (180degC).
Grease or spray with cooking spray a 3 Litre `bundt' (moulded tin with a hole in the centre) tin.
Cream the butter and sugar, add the eggs one at a time, then add the vanilla. Add sifted dry ingredients alternatively with the buttermilk, starting and ending with dry ingredients. Beat well after each addition.
Pour mixture into prepared tin and bake 45 - 50 minutes or until a skewer inserted in the centre comes out clean.
Leave in tin for 10 - 15 minutes before turning out of tin onto a cake rack.  Leave to cool then drizzle with the Chocolate Glaze.
To make the Chocolate Glaze:  To make the chocolate glaze, put the chocolate into a heatproof bowl. Heat the cream to simmering point in a small saucepan. Pour the cream over the chocolate and stir with a wooden spoon until smooth and glossy. Leave to cool for 5 – 10 minutes then pour the glaze over the cooled cake, smoothing the sides with a small spatula.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Chocolate Glaze (1)

 

200g dark or milk chocolate, broken into pieces
200ml Pouring cream

 

To make the chocolate glaze, put the chocolate into a heatproof bowl. Heat the cream to simmering point in a small saucepan. Pour the cream over the chocolate and stir with a wooden spoon until smooth and glossy. Leave to cool for 5 – 10 minutes then pour the glaze over the cooled cake, smoothing the sides with a small spatula.
