Easy Peasy Banana Bread

This is an easy and very forgiving recipe to which you can add chocolate chips, nuts, sultanas and spices (cinnamon, nutmeg, mixed spice). The batter is quickly made in a food processor. You can also use caster sugar instead of brown sugar. Divide mixture in half for one loaf.

Ingredients

  • medium-large very ripe bananas 4, peeled and cut into chunks
  • vegetable oil (such as safflower, bran corn or sunflower) 1 cup (250ml)
  • brown sugar 300g (1.5 cups)
  • free range or organic eggs 4
  • plain flour/all-purpose flour 400g ( 2 2/3 cups)
  • bi-carbonate of soda 1 teaspoon

Preheat oven to 170degC. Line 2 x 2.5 litre loaf tins with non-stick baking paper. Put the bananas into the bowl of a food processor. Process until smooth. Add the oil, sugar and eggs and process again until well combined. Sift together the flour and bi-carbonate soda and add to the bowl in three batches, processing between each batch – use a spatula to push the mixture away from the sides. Spoon into the prepared tins. Bake 50 – 60 minutes – or until a skewer inserted in the center comes out clean. Remove and leave to stand ten minutes before turning out of tin onto a rack.
