Make a batch of this terrific, tasty slice with the kids during the school holidays. When cool, cut into bars and store in an airtight jar in the fridge. I can guarantee they won’t last long!

Ingredients

  • mixed nuts (pistachios, pecans or walnuts, macadamias) 1 1/2 cups, unsalted
  • dried apricots 1 cup, diced
  • organic sultanas (golden raisins) 1 cup
  • plain flour 1/3 cup
  • flaked or shredded coconut 1 1/2 cups
  • white chocolate 300g, broken or chopped into small pieces
  • honey 1/2 cup

Preheat oven to 160C (140C fan-forced). Line a slab tin with baking paper. In a medium bowl, combine the mixed nuts, apricots and sultanas. Sift the flour over the top. Add the coconut and mix well to combine. Place the chocolate and honey in a heatproof bowl and melt over simmering water, stirring to combine. Remove from heat and pour over the fruit and nut mixture. Mix well to combine – it will be sticky and you’ll need to use your hands to bring it together. Spoon into tin and press down hard to even the top -if you dip your hands in milk, this will make it easier. Bake 35-40 minutes until golden on top. Remove from oven, mark into small bars or squares and leave to cool. Cut with a sharp knife when cold and store in a screw top jar in the fridge.
