I always look forward to these fabulous sandwiches served annually by Marita Blood at her Christmas party. They're also perfect for New Years Eve entertaining as they soak up the champagne, are easy to make - and make use of any leftover ham from Christmas.
My cousin Kellee Douglas, a Brisbane-based caterer, makes hers with leg ham, grain mustard and rocket and also serves turkey sandwiches (pictured) filled with sliced brie and whole berry cranberry, another goodie for NY Eve.

Coarsely chop up and mix together ham and mustard pickles then fold in mayonnaise and pepper to taste. Lightly butter 2 slices wholemeal bread, spread with a generous amount of ham mixture and top with second slice of buttered bread. Remove crusts and cut each sandwich into three fingers.
For a 3- decker sandwich, alternate one slice wholemeal bread with one slice white and top with one slice wholemeal.
Tip: add more mustard pickles and mayo according to taste and moistness.
