About this Recipe

I used "Tandaco" Seasoned Stuffing Mix for the sausage rolls but you can substitute breadcrumbs with a little onion powder and a mixture of dried herbs. The sesame seeds are optional. I also like to add some fennel seeds to the mix - or sprinkle them over the top.
Ingredients
500g beef sausage mince
2 free range or organic eggs, beaten with a pinch of salt
1 medium onion, peeled and finely chopped
1 teaspoon dried thyme
1/2 cup seasoning mix
1/4 cup beef stock
3 sheets frozen puff pastry, partially thawed
Egg wash:
1 egg, beaten with 2 teaspoons water
Preheat oven to 200C (180C Fan). Line a large baking tray with baking paper.
In a medium bowl, combine all the ingredients except the pastry. Mix together with a wooden spoon, or use your hands.
Divide mixture into six. Roll each one out in sausage shape, making them the same length as the pastry sheets.
Cut each sheet of pasty in half. Place filling down the middle of each half leaving about 3cm on either side.
Brush edges of pastry with water. Fold the pastry over and press to seal.
Place seam side down on the lined tray. Brush tops with egg wash.
Bake for 30 – 35 minutes, swapping the tray around once, until pastry is golden and filling is cooked.
Remove from oven and cut each roll into 5 pieces.
Serve hot with tomato sauce.
