Asparagus Fried Rice

Have you ever eaten freshly picked raw asparagus?  I bet you’ll be surprised by how sweet it is. Most kids love fried rice and the addition of fresh sweet asparagus and corn kernels to this one makes it extra good-for-you. I suggest you make the omelette first, then do the fried rice.

Have you ever eaten freshly picked raw asparagus?  I bet you’ll be surprised by how sweet it is. Most kids love fried rice and the addition of fresh sweet asparagus and corn kernels to this one makes it extra good-for-you. I suggest you make the omelette first, then do the fried rice.

Ingredients

  • fresh asparagus 1 – 2 bunches
  • vegetable or olive oil 2 tablespoons, plus extra
  • red capsicum 1, finely chopped
  • fresh corn kernels 1 cup
  • cooked long grain rice 3 – 4 cups, cooled
  • spring onions 3, finely sliced
  • eggs 2 – 3 free range or organic, lightly beaten
  • soy sauce
  • pepper

Serves 4 Trim the woody ends off the asparagus spears, then cut into 1cm slices. Heat a large frying pan of wok over medium-high heat, add oil and stir-fry capsicum, asparagus and sweet corn until just tender, about five minutes Meanwhile, heat a small frying pan with additional oil and cook eggs until set.  Turn omelette over and remove pan from heat.  Turn out onto chopping board and cut omelette into strips. Add rice and spring onions to vegetables and stir-fry until rice is heated through and the vegetables are tender.  Stir through omelette strips, season to taste with a little soy sauce and pepper and serve immediately.
