These delicious biscuits were served for afternoon tea at Loisaba Lodge, an upmarket safari wilderness lodge in central Kenya. The recipe was given to me by the chef, Consolata Wangechi, who created many delicious meals while we were there.
Preheat oven to 180°C, 350°F or gas mark 4.
In a large bowl cream together the butter and sugar, add the golden syrup and the egg, mixing well. ASift together the flour, baking powder, ginger, spice and baking soda and mix until well combined.
Roll into small balls, and place on lined baking tray allowing room to spread.
Do not flatten the balls. Bake for 15 minutes. Dust with sugar while warm.
