Santa biscuits

My daughter, Natali, made these gorgeous bikkies (cookies) for her daughter’s kindy Christmas party.  She told me she was inspired by the Funny Face ones I’d decorated for a children’s party in my cookbook, Entertaining at Home (Lansdowne).  They’re so easy and such fun to make especially if you get the kids to help.

My daughter, Natali, made these gorgeous bikkies (cookies) for her daughter’s kindy Christmas party.  She told me she was inspired by the Funny Face ones I’d decorated for a children’s party in my cookbook, Entertaining at Home (Lansdowne).  They’re so easy and such fun to make especially if you get the kids to help.

Ingredients

  • Royal Icing:
  • icing sugar (pure) 1 1/2 cups, sifted
  • egg white 1
  • lemon juice, fresh 1/2 teaspoon
Biscuits:
  • sweet oval biscuits (such as Arrowroot) 16
  • M&M’s or Smarties red and green
  • 100s & 1000s 1/2 cup
  • cachous silver (optional)

To make the Royal Icing: Lightly whisk egg white and lemon juice together in a bowl. Gradually add the icing sugar, whisking until smooth and combined. Spread icing evenly over biscuits using a small spatula (it helps to dip it first in warm water). Place eyes and nose in place using M&M’s or Smarties.  For the beards, sprinkle with 100s &1000s. Leave until set (the icing will set quite hard).
