These bacon, lettuce, avocado and tomato toasted sandwiches are great to make when you’re really hungry and looking for a quick fix.  It’s Australian Bacon Week this week: look for the pink square PorkMark label when buying bacon which guarantees it’s made from 100% Aussie Pork.

Ingredients

  • Turkish bread 4 x 10cm (4in) pieces, sliced in half lengthways
  • avocadoes 2 ripe, fim, cut in half, seed removed
  • tomatoes 2 -3 medium ripe
  • salt and freshly cracked pepper
  • bacon 8 rashers, rind removed, cooked until crisp, and drained on paper towels
  • lettuce leaves 8, organic (oak leaf or butter lettuce)

Makes 4 toasted sandwiches Toast the bread.  Remove from toaster and spread each slice with a little butter. Top with avocado slices. Add 2 – 3 slices of tomato.  Season with salt and pepper.  Top with crispy slices of warm bacon and lettuce leaves. Put on the lids and press together firmly. Serve immediately while bacon is still warm.
