Blind Dates

Be cheeky this Father’s Day, and offer Dad some blind dates (just don’t tell Mum!). This recipe is from my new e-book, A Sweet Little Book, for sale from my website. Kids from the age of 2 – 3 up will be able to help put them together. Make sure you use oily peanuts, not the dry-roasted ones. I bet Dad will be pleasantly surprised by the unusual combination of sweet and salt.

I bet Dad will be pleasantly surprised by the unusual combination of sweet and salt.

Ingredients

  • dried dates
  • salted oily peanuts
  • caster sugar

Remove the stones from the dates and fill each pocket with 2  – 3 peanuts. Roll the dates in the sugar.   Pack in layers between tissue or greaseproof paper in small boxes or tins. Busy Bee Says: good-quality peanut butter can be substituted for the peanuts – make sure it’s a crunchy one.  If you can find fresh dates, use them as they are luscious, but must be eaten within a week.
