Chocolate Peanut Butter Slice

This easy peasy no-bake slice is courtesy of Brisbane dietitian Leanne Ward, known as @the_fitness_dietitian, who shared her “famous and favourite recipe” on Instagram. It’s a goodie to make with the kids during the school holidays.
I much prefer dark chocolate but I bet they’ll prefer milk or white chocolate for the topping.  A few other variations include smooth or crunchy peanut butter or a nut butter of your choice and maple syrup instead of the honey.

Ingredients

Serves 12

  • peanut butter, 1 cup
  • honey, 1/4 cup plus 2 tablespoons
  • organic oats, 1 cup
  • shredded coconut, 1/4 cup
  • 70% dark chocolate, 200g

Line a small flat tray with baking paper, approx 26cmx 18cm.
Place the peanut butter and honey in a microwave-proof bowl and microwave for 40-60 seconds seconds in 15 -20 second increments until slightly warm and sticky.  Remove and stir together well.
Add the oats and coconut and stir well to combine.
Spoon into prepared tin and smooth the top. Melt the chocolate in a heatproof bowl over simmering water until smooth and glossy. Pour over top of peanut mixture and smoothe with a palette knife or spatula. Refrigerate.
