Curious, isn’t it, that passionfruit is in season in June and July? On a bleak wintery afternoon, I like to whip up a Passionfruit Delicious, a version of the better-known Lemon Delicious, to remind me of summer days.

Ingredients

  • self-raising flour 75g (1/2 cup)
  • caster sugar 155g (3/4 cup)
  • eggs, at room temperature 2, separated
  • cooled melted butter 60g
  • milk 250ml (1 cup)
  • passionfruit 6 large or 8 small

Serves 4 Preheat the oven to moderate (180degC/160degC fan-forced). Grease a 1L – 1.5L pudding dish. Sift the flour into a mixing bowl. Add the caster sugar, egg yolks and cooled melted butter. Beat until smooth. Gradually add the milk and the passionfruit pulp. In a separate bowl, whisk the egg whites until soft peaks form. Carefully fold the whites through the batter. Spoon the batter into prepared pudding dish and place in a baking tray of boiling hot water (pour in enough to come two-thirds of the way up the sides) and bake to baking dish until halfway up sides of smaller dishes. Bake for 30 – 40 minutes or until golden and just set. Cover the top with foil if it starts to become too golden in colour. Dust with icing sugar and serve warm with whipped cream.
