Lemon Chia Bliss Balls

These deliciously zesty, moist, bliss balls are not just good-for-you, they’re also easy and quick to make especially if you get the kids to help you roll them into balls. Add them to the school lunch box – or pack in boxes between layers of paper and give away as edible Christmas gifts. I’ve only just discovered that chia is the ancient Mayan word for “strength.” Despite their tiny size, chia seeds are one of the most nutritious foods, full of fibre, protein, omega-3 fatty acids and micronutrients.

I’ve only just discovered that chia is the ancient Mayan word for “strength.” Despite their tiny size, chia seeds are one of the most nutritious foods, full of fibre, protein, omega-3 fatty acids and micronutrients.  

Ingredients

  • pitted dried dates 150g, chopped
  • rolled oats 1 1/2 cups
  • shredded coconut 3/4 cup
  • lemon juice 1/2 cup, strained
  • lemons 2, finely grated zest
  • chia seeds 6 tablespoons
  • extra shredded coconut for rolling

 Cover the chopped dates with boiling water and leave to stand 20 -30 minutes or until softened. Strain dates, reserving 90ml of the soaking water. Place oats in a food processor or Thermomix and process into oat flour.  Add soaked dates, reserved soaking water and remaining ingredients.  Process until mixture comes together. Scrape mixture into a bowl and refrigerate, covered,  for an hour.  Roll into balls about the size of a walnut then roll each ball in coconut. Store in refrigerator in layers separated by baking paper.
