Native Mint and Mustard Lamb Fillets with Quandong and Peach Sauce

Here’s a simple but effective way of jazzing up lamb fillets. This recipe is from Juleigh Robin’s terrific book “Wild Food” which features recipes using native Australian ingredients – perfect to celebrate Australia Day!

Ingredients

  • dried native mint 2 teaspoons
  • mustard powder 2 tablespoons
  • freshly ground black pepper 1 teaspoon
  • parsley flakes 2 tablespoons
  • lamb fillets 8 x 100g, trimmed of sinew
  • olive oil
Quandong & Peach sauce
  • oive oil
  • onion 1 small, peeled and diced
  • garlic 1 clove, crushed
  • fresh ginger 1 teaspoon, grated
  • chilli 1 small, seeds removed and finely chopped
  • quandongs 1/2 cup, fresh or frozen
  • yellow fleshed peach 1, thinly sliced
  • sugar 1/2 cup
  • chicken or vegetable stock 1 cup
  • red wine 1 cup

Serves 4 Mix together the native mint, mustard powder, black pepper and parsley flakes on a plate. Roll the lamb fillets in the herb mix to lightly coat all sides. Heat a little olive oil in a frying pan over medium heat and cook the seasoned lamb for about 2 – 3 minutes on each side.  Cover and rest the meat for a minute or two, then slice diagonally and serve with hot Quandong and peach sauce. For the Quandong and Peach Sauce: heat a little olive oil in a small saucepan and gently fry the onion, garlic clove,  ginger and chilli until softened. Add the quandongs, peach, sugar, chicken or vegetable stock and  cup red wine.  Bring to the boil, reduce heat and simmer until the volume has reduced by half and the quandongs and peach have broken down in the sauce.
