Orange Poppy Seed Pancakes
Rustle up a batch of these “polka dot” pancakes for Shrove Tuesday. They’ll fit the bill for breakfast, brunch or dessert and offer something a little different.

You can substitute buttermilk for the yoghurt and blood oranges or lemons for the oranges, if liked. Best if you make the batter the night before.

Ingredients
Makes 10 – 12
- plain flour, 1 cup
- caster sugar, 1/4 cup
- baking powder, 1 1/2 teaspoons
- bi-carbonate soda, 1/2 teaspoon
- salt, a pinch
- vanilla yoghurt, 3/4 cup
- poppy seeds, 1/2 cup
- milk, 4 tablespoons
- fresh orange juice, 3 tablespoons
- unsalted butter, 45g, melted
- organic or free range egg, 1
- orange 2, finely grated zest
Sift together the flour, sugar, baking powder, bi-carbonate of soda and salt. Place dry ingredients into the food processor and process to combine.
Add the remaining ingredients and whiz until just combined. The batter will be quite thick. Pour it into a jug, cover with plastic wrap and refrigerate until ready to use.
Spray a frying pan or non-stick pan with cooking spray. Pour ¼ cup of the batter into the pan, using a spatula to push it into a round shape if necessary. Cook over medium heat until bubbles appear on the top of the pancake. Flip over and cook on the other side until light golden. Repeat with remaining batter.
Serve warm with maple syrup or honey and melted butter or vanilla yogurt.
