White Chocolate Bark

Yulefest might be winding up in the Blue Mountains, west of Sydney, but there’s still time to make a batch of this yummy sweet.  Wrapped in a cellophane bag and tied with a green, red or gold bow, it’s a terrific edible gift at any time of the year. Get the kids to help stir through the nuts and cranberries and to spread it out on the tray.
You can also use milk or dark chocolate to make the bark. Experiment with other nuts such as toasted  macadamias and almonds 0r pistachios; and fruits such as dried cherries and goji berries.

Yulefest might be winding up in the Blue Mountains west of Sydney but there’s still time to make a batch of this yummy sweet. Wrapped in a cellophane bag and tied with a green, red or gold bow, it makes a terrific edible gift at any time of the year. Get the kids to help stir in the nuts and cranberries and to spread it out on the tray.

Ingredients

  • white chocolate 250g, chopped or broken into pieces
  • walnuts 125g, toasted and roughly chopped
  • cranberries 60g, dried

 Line a baking sheet with baking paper.
Melt chocolate in a heatproof bowl over a pan of simmering water (don’t let bowl touch water). Stir until smooth, then stir through most of the nuts and cranberries.
Spread onto baking sheet. Sprinkle with remaining nuts and cranberries.
Leave to set and break into pieces. Keeps for up to a week in an airtight container.  Serves 6 – 8.
